Ingredients/Components

  • large onion, chopped - 1 item
  • large carrot, diced 1/2-inch - 1 item
  • vegetable oil - 1 Tbsp
  • large potatoes, peeled and diced - 2 item
  • can whole tomatoes - 1 oz
  • dried basil - 1 tsp
  • fresh ground black pepper - 1 item
  • cooked chickpeas - 2 c

How to make chickpea stew:

Place onion and carrot in medium pan with oil. Saute over low heat for 5 to 10 minutes. Add potatoes, tomatoes (with the juice), basil and pepper; stir to blend. Cover and simmer gently for about 30 minutes, or until potatoes are soft. Stir occasionally to make sure potatoes do not stick to pan. Add the chickpeas; warm through gently.
