Ingredients/Components

  • salt - 1 tsp
  • paprika - 1/4 tsp
  • grated Parmesan cheese - 1 Tbsp
  • dry white wine - 1/2 c
  • chopped dill - 1/2 tsp
  • onion, minced - 1 tsp
  • slices lean bacon - 4 item
  • mussels in shell - 4 doz

How to make baked mussels:

Select large fresh mussels with closed shells. Scrub shells; rinse and remove beards. Discard any mussels that float.

Pour 1 inch water into large pan. Add salt and the mussels. Cover. Bring to boil and let steam 3 minutes. Remove mussels and drain. Take mussels from shell. Strain broth and set aside.

Heat oven to 350°. Butter a large casserole. Place mussels in casserole. Season with salt, paprika, dill and minced onion. Pour wine over and sprinkle with cheese. Arrange bacon over all. Bake 15 minutes or until bacon is crisp.
