Brie en croute



  • butter - 1 Tbsp
  • water - 1 beaten
  • mini brie - 1 (15
  • fresh mushrooms washed and thinly sliced - 1/2 lb
  • Maderia or dry sherry - 1 Tbsp
  • sheet frozen puff pastry - 1 item

How to make brie en croute:

Saut? the mushrooms in butter and maderia until tender and they give up their juices. Drain. Slice brie in half horizontally. Place half the mushrooms between the slices of brie. Put the brie back together and place the remaining mushrooms on top.

Remove the puff pastry from the freezer. Allow to stand 20 minutes. Roll out until the sheet is large enough to cover the brie and mushrooms completely. Place the pastry over the brie and gather around the bottom, turning the brie over and pinching to seal with egg wash. Turn the brie right side up and decorate with leftover pieces of pastry in different shapes. Brush egg wash over the top.

Bake in pre-heated 400° oven for 20 to 25 minutes, until golden brown. Allow to sit for 15 to 20 minutes before serving.
