Stuffed potatoes
Ingredients/Components
- half and half - 1 c
- salt
- sticks butter - 2 item
- white pepper
- medium baking potatoes - 10 item
- mild cheese, grated - 1 c
- green onions and tops, chopped finely - 3/4 c
How to make stuffed potatoes:
Scrub potatoes well and bake in a 450° oven, until thoroughly done. Cut potatoes lengthwise, scoop out the pulp and mash with butter, cream, salt and pepper. Mix thoroughly. Add onions. Fill the reserved shells with the mixture and top with grated cheese. Bake at 350° for 15 to 20 minutes or until the cheese is melted.This may be made ahead of time and baked later. These also freeze beautifully. Serves 10.
