Ingredients/Components
- sugar - 2 Tbsp
- salt - 1/2 tsp
- water - 1/2 c
- shortening - 1 Tbsp
- plain flour - 2 c
- margarine - 2 Tbsp
- egg yolk - 1 item
- chili sauce - 3 Tbsp
- cooked, chopped chicken - 3/4 c
- pinch of chili powder - 1 item
How to make empanaditas:
Mix first 3 ingredients together; set aside.Combine flour, sugar and salt in a bowl. Cut in butter and shortening thoroughly. Mix in egg yolk, adding water gradually. Mix until dough forms a ball. Turn out on a floured surface. Knead until springy. Divide in half. Roll to 1/8-inch thick. Cut into 2 1/2-inch rounds. Place 1 teaspoon chicken mixture on half of each round. Fold pastry over, dampen edge with water and press firmly with fork tines to seal. Deep fry at 350°, turning once. Drain. May be frozen. Yield: 40 to 50.
