Baked herb rice
Ingredients/Components
- butter, melted - 5 Tbsp
- parsley flakes - 1 Tbsp
- oregano - 1/4 tsp
- finely chopped onion - 1/2 c
- slivered almonds - 1 c
- thyme - 1/4 tsp
- finely chopped celery - 3/4 c
- regular rice, uncooked - 2 c
- consomme, heated and divided chicken, best - 4 c
How to make baked herb rice:
Brown rice in butter for 5 minutes, stirring constantly. Combine rice, 3 1/4 cups consomme and herbs in a greased 2-quart casserole. Cover and bake at 350° for 1 hour, stirring several times. Stir in remaining 3/4 cup consomme, vegetables and almonds. Stir well. Cover and bake for 45 minutes. Makes about 10 servings.This came from The Baylor Alumni Association Cookbook and I tried it on company for the first time. It was absolutely wonderful. Serve with chicken.
