Apricot bread
Ingredients/Components
- sugar
- pkg - 6 oz
- milk - 1/3 c
- salt - 1/2 tsp
- egg, slightly beaten - 1 item
- baking soda - 1/2 tsp
- softened butter - 3 Tbsp
- all-purpose flour, sifted then measured - 2 c
- apricot liquid - 1/2 c
How to make apricot bread:
Wash apricots, cover with water and bring to a boil. Cook 5 minutes, then drain, saving liquid. Chop apricots very fine and set aside. Add salt and baking soda to sifted flour and sift again. Cream butter and sugar; stir in beaten egg. Alternate, adding flour mixture to sugar mixture with milk and apricot liquid. Fold in chopped apricots. Bake in preheated 350° oven in a wax paper lined loaf pan about 50 minutes. Will make 1 large loaf or 2 medium loaves.
