Ingredients/Components

  • sugar - 2 c
  • cinnamon - 1 tsp
  • flour - 3 c
  • butter - 1/2 lb
  • pinch of salt - 1 item
  • egg - 1 item
  • raisins - 1/2 c
  • egg white - 1 item
  • bread crumbs - 1 c
  • apples
  • lukewarm water about - 1/2 c
  • level Spry or Crisco - 1 Tbsp

How to make apple strudel:

Filling:2 lb. apples2 c. sugar1 tsp. cinnamon1/2 c. raisins1 c. bread crumbs Sift flour; measure, then sift again on dough board. Make a well in center. Put in your egg, egg white and shortening. Put your salt in the lukewarm water. Use just enough water to make a nice dough; knead until smooth and shiny and a few blisters appear (about 30 minutes). This is important, for unless dough is sufficiently kneaded, it cannot be stretched to required tissue paper thinness. Cover dough with a warmed bowl; allow to stand 20 minutes.

Filling: Prepare filling before dough is rolled out. Have the butter melted and crumbs ready. Place dough on floured tablecloth; pat into a flat piece in center of cloth. Spread melted butter on dough; pull out with hands carefully to the thinness of tissue paper. Spread cut up apples, cinnamon, bread crumbs and raisins on dough; dot entire dough with melted butter. Butter must be hot. Roll, grasping edges of tablecloth; roll evenly. Cut in strips; place on greased tin and bake at 450° for 10 minutes. Reduce heat to 350°; continue to bake for about 30 minutes more, until well done.
