Ingredients/Components

  • eggs - 4 item
  • milk
  • butter or margarine - 1 Tbsp
  • biscuit mix - 2/3 c
  • garlic powder - 1/4 tsp
  • pepper - 1/4 tsp
  • grated Parmesan cheese - 1/4 c
  • chopped onion - 1/2 c
  • chopped fresh parsley - 2 tsp
  • cloves garlic, minced - 2 item
  • olive oil
  • can sliced mushrooms, drained - 1 oz
  • diced celery - 1 Tbsp
  • 1 - 1/3 c
  • cans artichoke hearts, drained and chopped - 2 oz

How to make artichoke quiche:

Heat olive oil and butter in skillet. Add onion and next 3 ingredients. Saute until tender. Remove from heat; stir in artichokes. Spoon into a greased 10-inch quiche dish. Top with mushrooms; sprinkle with Swiss cheese.

Combine milk, eggs, biscuit mix, Parmesan, garlic powder and pepper in blender. Blend 10 seconds or until smooth, stopping to scrape sides, if necessary. Pour over artichoke mixture. Bake at 350° for 30 to 35 minutes or until set. Garnish, if desired with sweet red pepper rings.
