Ingredients/Components
- butter - 2 Tbsp
- biscuit mix - 1/3 c
- pepper - 1/8 tsp
- grated Parmesan cheese - 1/4 c
- eggs, slightly beaten - 2 item
- shredded, unpeeled zucchini 2 medium - 2 c
How to make zucchini fritters:
In a bowl, stir together the biscuit mix, Parmesan cheese and pepper. Stir in beaten eggs. Fold in zucchini. In a large, heavy skillet, melt butter. Use 2 tablespoons of mixture for each fritter. Cook until brown on each side.Recipe categories: Squash, Appetizers, Vegetables.
