Zucchini relish
Ingredients/Components
- sugar - 4 c
- salt - 5 tsp
- cornstarch - 2 Tbsp
- vinegar
- dry mustard - 1 tsp
- diced onion - 4 c
- black pepper - 1/2 tsp
- celery seed - 2 Tbsp
- green pepper, chopped fine - 1 item
- mustard seed - 2 Tbsp
- turmeric - 1 tsp
- zucchini, grated - 10 c
- small jar red pimientos - 1 item
How to make zucchini relish:
Mix zucchini, onion and salt; let stand overnight. In morning, rinse in cold water and drain well. Add remaining ingredients. Cook 20 minutes at boiling point, stirring often. Put in jars and seal.Recipe categories: Squash, Condiments, etc., Zucchini.
