Zucchini relish
Ingredients/Components
- sugar - 3 to
- cornstarch - 1 Tbsp
- nutmeg - 1 tsp
- mustard - 1 tsp
- celery seed - 2 tsp
- white vinegar - 2 to
- green peppers, ground - 2 item
- to 1/2 c - 5 Tbsp
- red pepper, ground - 1 item
- ground zucchini - 10 c
- ground onion - 5 c
- dash of Tabasco sauce if desired - 1 item
- pepper scant - 1 Tbsp
How to make zucchini relish:
Grind zucchini and onion. Add salt and let stand overnight. Next morning, drain and rinse in cold water and drain well. Grind peppers. Add vinegar. Add rest of ingredients all together. Bring to boil and cook 30 minutes. Seal in scalded jars. Makes 6 pints.Recipe categories: Squash, Condiments, etc., Zucchini.
