Zucchini pizza
Ingredients/Components
- zucchini, grated - 4 lb
- salt - 1 item
- oil - 2 Tbsp
- egg - 1 item
- Cheddar cheese, grated - 1/2 c
- pepper fresh ground - 1 item
- medium onion, chopped - 1 item
- tomato sauce - 1/2 c
- oregano - 1 tsp
- Parmesan cheese, grated - 1/2 c
- Mozzarella cheese, shredded - 1/2 c
- green or red pepper, strips - 1 item
How to make zucchini pizza:
Cut ends off zucchini and grate. Put in colander and sprinkle with salt. Let stand for 30 minutes. Squeeze water out of zucchini with hands. When quite dry, saute in oil for 5 minutes. Cool. Mix 2 cups zucchini with egg, cheese, onion, salt and pepper. Press mixture into an 8-inch pie pan. Bake at 400° for 10 minutes. Cool. Cover with tomato sauce; sprinkle with oregano. Top with cheeses and arrange pepper strips over all. Bake at 350° for 20 minutes.Recipe categories: < 60 mins, Main dish, Pizza.
