Zucchini pie



  • sugar - 1 c
  • cinnamon
  • salt - 1/4 tsp
  • brown sugar - 1/2 c
  • nutmeg - 1/2 tsp
  • lemon juice
  • plus 2 Tbsp - 1 c
  • peeled and sliced zucchini - 8 c
  • Add cinnamon, salt, nutmeg and sugar

How to make zucchini pie:

Simmer zucchini and lemon juice until just tender. Add cinnamon, salt, nutmeg and sugar. Simmer until thick.Crumb Mixture:3 c. flour1 c. sugar1/2 c. brown sugar1 c. plus 2 Tbsp. butter Cut butter into flour-sugar mixture. Press 1/2 crumb mixture into 9 x 13-inch pan. Bake at 375° for 10 minutes. Remove from oven. Add zucchini mixture, then top with remaining crumb mixture. Sprinkle with cinnamon. Return to oven and bake 30 minutes. Serve warm with whipped topping.
