Zucchini pie
Ingredients/Components
- eggs - 2 item
- stick margarine - 1 item
- chopped onion - 1/2 c
- sliced zucchini - 4 c
- Mozzarella cheese, shredded - 2 c
- oregano - 1/4 tsp
- crescent rolls - 1 pkg
- salt and pepper - 1/2 tsp
- parsley - 2 Tbsp
How to make zucchini pie:
Saute zucchini and onion in margarine in skillet. Add oregano, salt, pepper and parsley. Beat eggs and add to grated Mozzarella cheese (8 ounces). Add to skillet and mix well.Line 9-inch pie pan with crescent rolls. Pour zucchini mixture into pie shell and bake at 375° for 20 minutes or until knife comes out clean. Cool 10 minutes.
Note: You can also add cooked chicken squares to mixture.
