Ingredients/Components

  • eggs - 2 item
  • stick margarine - 1 item
  • chopped onion - 1/2 c
  • sliced zucchini - 4 c
  • Mozzarella cheese, shredded - 2 c
  • oregano - 1/4 tsp
  • crescent rolls - 1 pkg
  • salt and pepper - 1/2 tsp
  • parsley - 2 Tbsp

How to make zucchini pie:

Saute zucchini and onion in margarine in skillet. Add oregano, salt, pepper and parsley. Beat eggs and add to grated Mozzarella cheese (8 ounces). Add to skillet and mix well.

Line 9-inch pie pan with crescent rolls. Pour zucchini mixture into pie shell and bake at 375° for 20 minutes or until knife comes out clean. Cool 10 minutes.

Note: You can also add cooked chicken squares to mixture.
