Zucchini pie
Ingredients/Components
- salt - 1/2 tsp
- oil - 1/2 c
- large eggs - 4 item
- grated zucchini - 4 c
- Bisquick - 1 c
- freshly ground black pepper - 1/4 tsp
- Parmesan or Romano cheese, grated - 1/2 c
- dried parsley or 1 Tbsp - 1/2 1
- dried oregano or 1 Tbsp - 1/4 1/2
- medium onion, finely chopped and saut?Šed - 1/2 item
How to make zucchini pie:
Combine first 6 ingredients and mix well. Beat eggs with oil and add grated zucchini to egg-oil mixture. Saut onion until golden, about 5 minutes on medium heat. Add to zucchini mixture. Pour into Bisquick mixture and stir thoroughly, but do not beat. Pour into well-greased 10-inch pie plate or 9-inch cake pan. Bake at 350° for 25 minutes or until knife inserted into pie comes out clean.Recipe categories: Eggs/dairy, Italian, European.
