  • sugar - 1/2 1
  • eggs - 2 item
  • vanilla - 1 tsp
  • salt - 3/4 tsp
  • water - 1/3 c
  • baking powder - 1 tsp
  • baking soda - 1 tsp
  • all-purpose flour - 3/4 c
  • chopped walnuts - 1/3 c
  • grated zucchini
  • raisins - 1/3 c
  • margarine - 1/3 c
  • ground cloves - 1/2 tsp
  • ground cinnamon - 1/4 tsp
  • ground nutmeg - 1/4 tsp
  • whole wheat flour - 3/4 c

How to make zucchini bread:

In a large bowl, mash the margarine with the back of a fork. Mix in the sugar. Add the eggs, water and vanilla and stir until the batter is smooth. Stir in the zucchini, walnuts and raisins. In a medium size bowl, combine the flours, baking soda, baking powder, salt, cloves, cinnamon and nutmeg. Add the flour mixture to the zucchini mixture and fold the 2 mixtures together gently. Pour the batter into a greased loaf pan. Bake for about 1 hour at 350°.
