Ingredients/Components
- sugar - 1/2 1
- eggs - 2 item
- vanilla - 1 tsp
- salt - 3/4 tsp
- water - 1/3 c
- baking powder - 1 tsp
- baking soda - 1 tsp
- all-purpose flour - 3/4 c
- chopped walnuts - 1/3 c
- grated zucchini
- raisins - 1/3 c
- margarine - 1/3 c
- ground cloves - 1/2 tsp
- ground cinnamon - 1/4 tsp
- ground nutmeg - 1/4 tsp
- whole wheat flour - 3/4 c
How to make zucchini bread:
In a large bowl, mash the margarine with the back of a fork. Mix in the sugar. Add the eggs, water and vanilla and stir until the batter is smooth. Stir in the zucchini, walnuts and raisins. In a medium size bowl, combine the flours, baking soda, baking powder, salt, cloves, cinnamon and nutmeg. Add the flour mixture to the zucchini mixture and fold the 2 mixtures together gently. Pour the batter into a greased loaf pan. Bake for about 1 hour at 350°.Recipe categories: Breads, Quick breads, Sweet.
