Ingredients/Components
- sugar
- vanilla - 1 tsp
- salt - 1/2 tsp
- butter - 1/3 c
- water
- baking soda
- all-purpose flour - 1 c
- chopped walnuts - 1 c
- raisins - 1 c
- ground cinnamon - 1 tsp
- ground nutmeg - 1 tsp
- ground allspice - 1/2 tsp
- whole wheat flour - 1 c
- shredded raw carrots - 2 c
- ground clove - 1/2 tsp
How to make carrot cake:
Place lightly packed shredded carrots, raisins, sugar, water and butter in a 3-quart saucepan and bring to a simmer over medium heat. Continue to simmer for 5 minutes, uncovered. Remove from heat and let cool.In a bowl, sift together all-purpose flour, baking soda, salt, ground cloves, ground allspice, ground nutmeg and ground cinnamon and whole wheat flour. Stir dry ingredients into cooled carrot mixture until flour is moist. Stir in vanilla and chopped walnuts. Spoon into greased 9-inch square baking pan. Bake at 350° for 35 minutes, or until toothpick comes out clean. Cool on a rack for 10 minutes.
