  • sugar - 2 c
  • oil - 1 c
  • vanilla - 2 tsp
  • peeled and grated zucchini squash - 2 c
  • flour - 3 c
  • salt - 1 tsp
  • baking powder - 1 tsp
  • cinnamon - 1/2 tsp
  • nuts optional - 1 c
  • Add zucchini, then add flour sifted with salt, baking powder and cinnamon

How to make zucchini bread:

Beat eggs, sugar, oil, and vanilla. Add zucchini, then add flour sifted with salt, baking powder and cinnamon. Add 1 cup nuts (more or less). Bake in two greased and floured loaf pans for 1 hour or until done at 350°.
