Ingredients/Components
- pkg - 1 oz
- sour cream - 1 c
- melted margarine - 1/2 c
- shredded carrots - 1 c
- chopped onion - 1/4 c
- yellow squash, sliced 6 c - 2 lb
How to make yellow squash casserole:
Cook squash and onion in boiling, salted water for 5 minutes; drain. Mix soup and sour cream. Stir in the carrots; fold in squash and onion. Combine margarine and stuffing mix. Spread half stuffing mix in lightly buttered 12 x 7 1/2-inch baking dish. Spoon vegetable mix over stuffing. Sprinkle remaining stuffing mixture over vegetables.
