Zucchini casserole
Ingredients/Components
- pkg - 1 oz
- sour cream - 1 c
- melted margarine - 1/2 c
- shredded carrots - 1 c
- chopped onion - 1/4 c
- can cream of chicken soup - 1 item
- peeled and thinly sliced zucchini - 6 c
How to make zucchini casserole:
Cook zucchini and onion in a small amount of water about 5 minutes. Drain. Combine soup, sour cream and carrots. Add zucchini and onion. Combine stuffing mix and margarine. Spread 1/2 of mixture in 9 x 13-inch casserole. Spread zucchini mixture on top. With spoon, slightly mix the two together. Sprinkle remaining stuffing mix over top. Cover with foil or glass cover.
