Ingredients/Components

  • butter or margarine - 1/4 c
  • salt - 1 tsp
  • flour - 1/3 c
  • chopped onion - 1/3 c
  • chicken broth - 1 c
  • dash of pepper - 1 item
  • chopped parsley - 1/3 c
  • cooked, cubed chicken - 2 c
  • half and half cream - 1 c
  • chopped pimiento - 1/3 c
  • chopped, blanched almonds - 3 Tbsp
  • box long grain and wild rice - 1 oz

How to make wild rice and chicken casserole:

Cook rice according to directions on package. Saute onion in butter or margarine. Blend in flour, salt and pepper. Stir in half and half and chicken broth. Stir constantly. Cook until thickened. Combine sauce with cooked rice, chopped pimiento and parsley, chicken and almonds. Pour into 2-quart casserole which has been sprayed with Pam. Bake 30 minutes at 425°. Serves 4 to 6.
