Ingredients/Components
- salt - 1/4 tsp
- baking powder
- egg - 1 item
- sifted flour - 2 c
- cooking oil - 2 Tbsp
- minced onion - 1 Tbsp
- can minced clams or 1 c - 1 1/2
How to make rhode island clam cakes:
Mix dry ingredients. Add onion, egg, oil and drained clams, reserving clam juice. Using juice as a liquid, add a little at a time until batter is as thick as fritter batter. Fry until golden in deep fat at 375°, using a mounded tablespoonful of batter per cake. Salt to taste after draining on paper towels.
