Wild rice and chicken casserole
Ingredients/Components
- pkg - 1 oz
- flour - 2 Tbsp
- margarine - 2 Tbsp
- skim milk - 1 c
- sliced green onions - 1/2 c
- sliced mushrooms - 1/2 c
- Chablis - 1/4 c
- chopped chicken breasts - 4 c
How to make wild rice and chicken casserole:
Cook rice according to directions and set aside. Melt margarine in saucepan. Add flour. Stir until smooth.Add milk and cook 1 minute. Stir constantly until bubbly and thickened. Remove from heat and stir in wine. Coat skillet with a cooking spray. Place over medium heat until hot. Add mushrooms and onions. Saute until tender.
Combine vegetables, rice, sauce and chicken, stirring well. Spoon mixture into 2-quart casserole, coated with cooking spray. Bake at 350° for 15 minutes.
