Watermelon rind pickles
Ingredients/Components
- sugar - 7 c
- water - 1 gal
- red food coloring - 1 item
- oil of cloves - 1/2 tsp
- watermelon - 1 item
- lime - 1/4 c
- oil of cinnamon - 1/2 tsp
- white distilled vinegar - 3 c
- red cinnamon candy - 1/2 c
How to make watermelon rind pickles:
Select a melon with thick rind. Remove outer green skin and pink flesh. Cut rind into 1 inch cubes to make 14 cups. Combine water and lime, add cubed rind and soak overnight in refrigerator. Drain cubes and rinse in cold water, then cover with cold water. Bring to boil and cook 30 minutes. Combine vinegar, sugar, oil of cloves and cinnamon, red food coloring and candy; pour over cubes, boil slowly until cubes look clear; be sure cubes are covered with syrup throughout cooking. Add water if syrup cooks down. Place pickles in hot sterilized jars. Cover with syrup. Seal and process in boiling water bath 5 minutes.Recipe categories: Lunch/snacks, Appetizers, Melons.
