Ingredients/Components
- defatted chicken broth - 6 c
- water - 2 c
- carrots, sliced - 2 c
- large onion, chopped - 1 item
- packed green cabbage, chopped - 4 c
- , chopped or 1 pt - 2 tomatoes
- large white potatoes, cut in chunks - 2 item
- box frozen baby lima beans - 1 oz
- dried Italian seasoning - 1 tsp
- bay leaves - 2 item
- salt or salt substitute - 1 tsp
- sugar - 1 Tbsp
- pepper to taste - 1 item
How to make vegetable soup:
Bring chicken and water mixture to a boil. Add onion, celery and carrots. Cook 2 minutes. Add remaining ingredients. Bring to a boil. Reduce heat and simmer 20 minutes or until potatoes are tender. Discard bay leaves.Recipe categories: < 4 hours, Weeknight, Soups & stews.
