Vegetable soup


Ingredients/Components
- water - 1 c
- chopped fresh parsley - 2 Tbsp
- chili powder - 1/2 tsp
- strong chicken broth - 3 c
- canned tomatoes, drained and coarsely chopped - 2 c
- onion, coarsely chopped - 1 item
- large or 2 small cloves garlic, finely chopped - 1 item
- stalks celery, finely chopped - 2 item
- carrots, peeled and sliced - 2 item
- pinch of cayenne - 1 item
- salt and freshly ground black pepper to taste - 1 item
- fresh or thawed frozen corn kernels
- medium zucchini, sliced into rounds - 3 item
- freshly grated Parmesan cheese - 1 item
How to make vegetable soup:
In a large pot, combine the broth, water, tomatoes, onion, garlic, celery, carrots and seasonings. Bring to a boil, cover and simmer for 30 minutes. Add the corn, zucchini and parsley and continue to simmer for an additional 10 minutes. Adjust the seasonings and serve hot with a light sprinkling of Parmesan cheese.
