Ingredients/Components

  • water - 1 c
  • chopped fresh parsley - 2 Tbsp
  • chili powder - 1/2 tsp
  • strong chicken broth - 3 c
  • canned tomatoes, drained and coarsely chopped - 2 c
  • onion, coarsely chopped - 1 item
  • large or 2 small cloves garlic, finely chopped - 1 item
  • stalks celery, finely chopped - 2 item
  • carrots, peeled and sliced - 2 item
  • pinch of cayenne - 1 item
  • salt and freshly ground black pepper to taste - 1 item
  • fresh or thawed frozen corn kernels
  • medium zucchini, sliced into rounds - 3 item
  • freshly grated Parmesan cheese - 1 item

How to make vegetable soup:

In a large pot, combine the broth, water, tomatoes, onion, garlic, celery, carrots and seasonings. Bring to a boil, cover and simmer for 30 minutes. Add the corn, zucchini and parsley and continue to simmer for an additional 10 minutes. Adjust the seasonings and serve hot with a light sprinkling of Parmesan cheese. Serves 6.
