Vegetable casserole
Ingredients/Components
- long grain rice - 1 c
- butter or margarine - 2 Tbsp
- chopped onion - 1/2 c
- chopped carrots - 1 c
- broccoli flowerets - 2 c
- medium bell pepper, chopped - 1 item
- cloves garlic, minced - 2 item
- chicken broth
- chopped parsley - 1 Tbsp
- dash of salt and pepper - 1 item
- grated Cheddar cheese - 1 c
How to make vegetable casserole:
In a 2-quart casserole, saute the onions in the butter until soft. Add the carrots. Cook over medium heat for about 3 minutes. Add broccoli, bell pepper, garlic and rice. Stir to blend. Add the chicken broth. Bring to a boil. Cover with tight fitting lid. Cook over low to medium heat for about 20 minutes or just until rice is done.
