Ingredients/Components

  • long grain rice - 1 c
  • butter or margarine - 2 Tbsp
  • chopped onion - 1/2 c
  • chopped carrots - 1 c
  • broccoli flowerets - 2 c
  • medium bell pepper, chopped - 1 item
  • cloves garlic, minced - 2 item
  • chicken broth
  • chopped parsley - 1 Tbsp
  • dash of salt and pepper - 1 item
  • grated Cheddar cheese - 1 c

How to make vegetable casserole:

In a 2-quart casserole, saute the onions in the butter until soft. Add the carrots. Cook over medium heat for about 3 minutes. Add broccoli, bell pepper, garlic and rice. Stir to blend. Add the chicken broth. Bring to a boil. Cover with tight fitting lid. Cook over low to medium heat for about 20 minutes or just until rice is done. Add parsley and salt and pepper.
