Ingredients/Components
- salt - 1/2 tsp
- pepper - 1/2 tsp
- mustard - 1/4 c
- mayonnaise - 1/2 c
- chopped pimento - 1/4 c
- dry bread crumbs
- cans tuna in water, drained - 2 oz
- finely chopped onion, celery and green pepper - 1/4 c
How to make tuna cakes:
Mix tuna, mayonnaise, vegetables, salt, pepper and 3/4 cup bread crumbs. Shape into 15 (2-inch) balls. Roll in remaining crumbs, coating well. Flatten balls into small patties. Refrigerate 30 minutes. Heat 1/2 cup oil in a skillet and fry patties 5 minutes on each side. Add more oil as needed.
