Ingredients/Components

  • salt - 1/2 tsp
  • pepper - 1/2 tsp
  • mustard - 1/4 c
  • mayonnaise - 1/2 c
  • chopped pimento - 1/4 c
  • dry bread crumbs
  • cans tuna in water, drained - 2 oz
  • finely chopped onion, celery and green pepper - 1/4 c

How to make tuna cakes:

Mix tuna, mayonnaise, vegetables, salt, pepper and 3/4 cup bread crumbs. Shape into 15 (2-inch) balls. Roll in remaining crumbs, coating well. Flatten balls into small patties. Refrigerate 30 minutes. Heat 1/2 cup oil in a skillet and fry patties 5 minutes on each side. Add more oil as needed. Remove from skillet and drain on paper.
