Sweet potato balls



  • sugar - 1/2 c
  • cinnamon - 1/2 c
  • brown sugar - 4 Tbsp
  • butter - 1/4 c
  • water - 1/2 c
  • ginger - 1/2 c
  • pecans - 3/4 c
  • small can crushed pineapple - 1 item
  • large can sweet potatoes, drained - 1 item
  • marshmallows and coconut - 1 item

How to make sweet potato balls:

Pour the liquid from the sweet potatoes into a saucepan. Heat with water and sugar. Add mashed sweet potatoes; add butter, cinnamon, ginger, pecans, pineapple and brown sugar. Just bring to a boil; let cool. Roll into balls and roll in coconut. Top with marshmallows. Bake at 350° until browned.
