Ingredients/Components

  • sugar - 4 lb
  • cloves - 1 item
  • mace - 1 item
  • ginger root - 1 item
  • watermelon rind and red meat - 1 item
  • ginger water - 1 item
  • salt in 1 qt - 4 Tbsp
  • vinegar to 7 lb - 1 qt
  • cinnamon bark - 1 item

How to make watermelon pickles:

Cut off rind and red meat. Soak overnight in salt water. Soak overnight in clear water. Then boil in strong ginger water after weighing.

To 7 pounds of melon take 1 quart of vinegar, 4 pounds of sugar, cinnamon bark, cloves, mace and ginger root. Boil until clear. Pack in jars and seal at once.

This recipe is old, handed down from my grandmother.
