Watermelon pickles
Ingredients/Components
- sugar - 4 lb
- cloves - 1 item
- mace - 1 item
- ginger root - 1 item
- watermelon rind and red meat - 1 item
- ginger water - 1 item
- salt in 1 qt - 4 Tbsp
- vinegar to 7 lb - 1 qt
- cinnamon bark - 1 item
How to make watermelon pickles:
Cut off rind and red meat. Soak overnight in salt water. Soak overnight in clear water. Then boil in strong ginger water after weighing.To 7 pounds of melon take 1 quart of vinegar, 4 pounds of sugar, cinnamon bark, cloves, mace and ginger root. Boil until clear. Pack in jars and seal at once.
