Ingredients/Components
- pkg - 1 oz
- sour cream - 1 c
- melted butter - 1/2 c
- shredded carrots - 1 c
- chopped onion - 1/4 c
- can cream of chicken soup - 1 item
- summer squash, sliced yellow, zucchini, etc - 2 lb
How to make summer squash casserole:
In a saucepan, cook sliced squash and chopped onion in salted water for 5 minutes. Drain. Combine soup and sour cream, stir in shredded carrots. Fold in drained, cooked squash and onion. Combine stuffing mix and butter and spread half of stuffing mix in the bottom of a 12-inch baking dish. Spoon vegetable mixture on top and sprinkle with remaining stuffing over vegetables.
