  • sour cream - 1 c
  • shredded carrots - 1 c
  • butter, melted - 1/2 c
  • chopped onion - 1/4 c
  • can cream of chicken soup - 1 item
  • sliced yellow summer squash - 6 c
  • chicken-flavored range top stuffing mix - 1 pkg

How to make summer squash casserole:

In a saucepan, cook squash and onion in boiling salted water; cover for 5 minutes. Drain and set aside. Stir together soup and sour cream. Stir in carrots, then fold in squash and onions. Spread half stuffing mix in bottom of 12 x 7-inch baking pan. Spoon vegetable mixture over stuffing and sprinkle with remaining stuffing mix. Bake, uncovered, in 350° oven 25 to 30 minutes.
