Ingredients/Components
- sour cream - 1 c
- shredded carrots - 1 c
- butter, melted - 1/2 c
- chopped onion - 1/4 c
- can cream of chicken soup - 1 item
- sliced yellow summer squash - 6 c
- chicken-flavored range top stuffing mix - 1 pkg
How to make summer squash casserole:
In a saucepan, cook squash and onion in boiling salted water; cover for 5 minutes. Drain and set aside. Stir together soup and sour cream. Stir in carrots, then fold in squash and onions. Spread half stuffing mix in bottom of 12 x 7-inch baking pan. Spoon vegetable mixture over stuffing and sprinkle with remaining stuffing mix.
