  • eggs - 3 item
  • Mazola oil - 1 c
  • white sugar
  • vanilla - 1 tsp
  • grated zucchini - 2 c
  • flour - 3 c
  • salt - 1 tsp
  • soda - 2 tsp
  • baking powder - 1/4 tsp
  • cinnamon - 3 tsp
  • nutmeg - 1/2 tsp
  • chopped nuts - 1/2 1

How to make zucchini nut bread:

Beat eggs. Add oil, sugar and zucchini. Mix well, then add flour, salt, soda, cinnamon, baking powder and nutmeg. Mix well. Stir in nuts. Pour into 2 greased pans, 5 1/2 x 9 1/2-inches. Bake at 325° for 1 hour.
