Ingredients/Components

  • salt - 1/2 tsp
  • egg, beaten - 1 item
  • pepper - 1/4 tsp
  • onion, chopped - 1 item
  • butter, divided - 4 Tbsp
  • fine cracker crumbs - 1/2 c
  • medium yellow squash, sliced - 3 item
  • Velveeta cheese, chopped - 1/3 c

How to make squash casserole:

Cook squash and onion in small amount of water until tender. Drain. Add crumbs (reserve 1 tablespoon for top), cheese, egg, salt and 2 tablespoons butter. Put in greased casserole dish and top with rest of crumbs. Dot with 2 tablespoons of butter. Bake at 375° for 15 minutes or until brown.
