Squash casserole
Ingredients/Components
- pkg - 1 oz
- butter or margarine - 1/2 c
- dairy sour cream - 1 c
- shredded carrots - 1 c
- chopped onion - 1/4 c
- can cream of chicken soup - 1 item
- squash zucchini or yellow or mixed - 2 lb
How to make squash casserole:
Cook sliced squash and onion in boiling water for about 3 minutes. Squash must still be a little crisp. Drain. Combine chicken soup and sour cream. Stir in the carrots, squash and onions; add salt to taste. Combine stuffing mix with the melted butter. Spread half the stuffing mix in bottom of a 12 x 7 x 2-inch baking dish. Spoon vegetable mixture on top of stuffing mix, then sprinkle the rest of the stuffing on top of the vegetable mixture. Bake at 350° for 25 to 30 minutes or until hot and bubbly.
