Stuffed sweet potatoes
Ingredients/Components
- butter or margarine - 2 Tbsp
- salt - 1/2 tsp
- sliced green onion - 1/4 c
- grated Cheddar cheese - 1/4 c
- mushrooms - 1/4 lb
- oregano, crushed - 1/4 tsp
- thyme, crushed - 1/4 tsp
- slices bacon - 6 item
- medium sweet potatoes or yams - 4 item
How to make stuffed sweet potatoes:
Wash potatoes. Bake at 350° for 1 hour. In medium skillet, cook bacon until crisp; drain and crumble. Pour off all but 1 tablespoon bacon drippings. Add mushrooms and onion; cook until tender.
