Stuffed eggplant
Ingredients/Components
- salt - 1 tsp
- butter - 2 Tbsp
- water - 1 Tbsp
- egg - 1 item
- paprika - 1 item
- pepper - 1 item
- soft bread crumbs - 1 c
- grated cheese - 1 item
- ground beef - 3/4 lb
- onion - 1/4 c
- celery - 1/2 c
- green pepper - 3 Tbsp
- large eggplant - 1 item
How to make stuffed eggplant:
Scoop middle out of eggplant. Save shell halves. Saute pepper, celery and onion in butter. Add raw diced eggplant. Add ground beef. Add bread crumbs, egg and a little water. Salt and pepper to taste. Put mixture in shell of eggplant and bake at 350° for 45 minutes to one hour. Top with grated cheese.Recipe categories: Vegetables, Main dish, Low Carb.
