Stuffed eggplant
Ingredients/Components
- ground beef - 1 lb
- salt and pepper - 1 item
- bacon drippings - 2 Tbsp
- small eggplant - 1 item
- small onion, cut fine - 1 item
- or 3 slices bacon - 2 item
How to make stuffed eggplant:
Parboil eggplant until tender, but not soft. Cut in half and scoop out the inside, but do not break the skin. Heat the drippings; add onion and gruond beef and let them brown and partially cook. Add the bits of eggplant and refill the shells. Lay bacon strips over the top. Place in a 350° oven for 10 minutes or until finished cooking.Recipe categories: Vegetables, Main dish, Low Carb.
