Ingredients/Components

  • ground beef - 1 lb
  • salt and pepper - 1 item
  • bacon drippings - 2 Tbsp
  • small eggplant - 1 item
  • small onion, cut fine - 1 item
  • or 3 slices bacon - 2 item

How to make stuffed eggplant:

Parboil eggplant until tender, but not soft. Cut in half and scoop out the inside, but do not break the skin. Heat the drippings; add onion and gruond beef and let them brown and partially cook. Add the bits of eggplant and refill the shells. Lay bacon strips over the top. Place in a 350° oven for 10 minutes or until finished cooking.
