- Flour - 1 item
- Oil - 1 item
- 1-2 eggplants
- Filling: Ricotta
- Grated cheese - 1 item
- Spaghetti sauce - 1 item
How to make stuffed eggplant:
Filling: Ricotta Parsley Gd. pepper Grated cheese2 eggs Spaghetti sauce Slice eggplants, not too thin. Dip in flour then in mixture of eggs and water. Fry in oil, then lay on paper towel to drain. Filling: Combine all ingredients and place filling in each eggplant. Roll up & place in 9x13 dish which is lined with some spaghetti sauce. Pour additional sauce over eggplant.
