Ingredients/Components
- eggs, beaten - 2 item
- grated cheese - 2 c
- Ritz crackers - 1 pkg
- stick oleo - 1/3 item
- small can tomato sauce - 1 item
- jar pimento - 1 item
- eggplant - 1 item
- chopped onion to taste - 1 item
- chopped bell pepper to taste - 1 item
How to make eggplant casserole:
Peel and boil eggplant until tender. Drain and mash. Saute onion and pepper. Combine eggplant, onion, tomato sauce, pepper, salt, pimento, crumbled crackers, beaten egg and cheese. Pour into buttered dish. Sprinkle cracker crumbs on top. Bake at 375° for 25 to 30 minutes.Recipe categories: Side dish, Vegetables, Casseroles.
