How to make stuffed chicken breasts:
Most ingredients are approximate, depending on how many guests are to be served. This recipe can be altered to stuff the chicken breasts depending on what you have in the fridge. Some suggestions: chopped cooked spinach, parmesan cheese, blue cheese, scallions, baby shrimp, asparagus, dried cranberries and sage, stuffing, herbs and whatever else inspires you.Preheat oven to 350°. Place breasts between sheets of wax paper and pound them till thin. Place a small amount of your creative stuffing mixture at one end and roll up the breast jelly-roll style. Secure with wooden toothpicks. Heat an oven proof frying pan with olive oil and saut on all sides until lightly browned. Place pan in oven and bake approx.10 minutes, or until chicken is cooked through. Remove pan from oven (don't forget oven mitts) and place chicken rolls on paper towels to drain oil. Let rest a few minutes (while you have a nice glass of wine), then slice rolls and arrange on plate.
