Ingredients/Components

  • medium chicken thighs - 12 item
  • cooking oil - 1/3 c
  • dry sherry - 3 Tbsp
  • soy sauce - 1/2 c
  • cloves fresh garlic - 3 item
  • Chinese 5-spice powder - 1 Tbsp
  • minced fresh ginger root or 1/4 tsp - 1 tsp

How to make spicy chicken thighs:

Mix all the liquid ingredients and the spices. Pour mixture over chicken pieces to marinate for several hours. You can marinate the chicken pieces either in a shallow covered pan, turning them every few hours OR put the chicken and the seasoning mixture into a tightly sealed plastic bag.

To cook, line the bottom and sides of a 9 x 13 baking pan with aluminum foil. Put a rack at the bottom of the pan to put the chicken pieces on. Bake at 350° for 1 hour (or 1 hour and 15 minutes). Baste every 15 minutes with the seasoning mixture. This chicken could also be barbecued.

TIP: The aluminum foil helps with easy clean up. If you don't use the foil and the pan is caked with baked on food another easy clean up method is to put BOILING water in the pan up to the top of any baked on food. Sprinkle in some baking soda (which will fizz) and let stand for about 1/2 hour before trying to clean it. Most of the baked on food will come off easily.
