Ingredients/Components

  • Celery, chopped - 1 c
  • Olive Oil - 2 Tbsp
  • Oregano - 2 tsp
  • Salt & Pepper to Taste - 1 item
  • Can Tomato Paste - 6 oz
  • Cloves Garlic, chopped - 4 item
  • Sweet Basil - 2 tsp
  • Chicken Breasts Boneless, Skinless
  • Green peppers Cut in strips - 2 item
  • Mushrooms Cut - 2 C
  • Red Onion Sliced - 1/2 c
  • Parsley Fresh is best if possible - 1/4 c
  • Red Pepper is good if a little spice is desired - 1 item
  • Can Whole Tomatoes Cut - 28 oz

How to make chicken cacciatore:

1. In a large deep skillet brown chicken and the first 4 cloves of garlic in the olive oil, then remove chicken. 2. Add the last 2 cloves of garlic, peppers, mushrooms, celery, onion, oregano, sweet basil, parsley, salt, pepper, and red pepper (if desired), then brown. 3. Add the whole tomatoes, paste, and chicken. Bring to a vigorous simmer.

Serve over pasta with French bread and chilled beverage.
