Ingredients/Components

  • paprika - 2 3
  • red wine vinegar - 1/2 c
  • olive oil - 1/4 c
  • salt to taste - 1 item
  • chicken, cut up - 1 item
  • bay leaves - 2 item
  • hot pepper - 1/2 1
  • water if needed - 1/2 c
  • dry basil - 1 Tbsp
  • sweet vermouth - 1/2 c
  • to 2 cloves crushed garlic - 1 item
  • sliced mushrooms optional, add last 10 minutes

How to make chicken cacciatore:

Remove skin from chicken; cut up into equal portions for cooking uniformly (breast can be cut into 4 pieces). Brown chicken in oil and garlic. Combine rest of ingredients and pour over chicken. Cover and let simmer for approximately 1 hour, basting every 15 minutes. Remove bay leaf before serving. Serve with spaghetti with oil and garlic sprinkled with Romano cheese.

This recipe doesn't call for tomatoes.
