Squash relish
Ingredients/Components
- sugar - 5 c
- salt - 5 Tbsp
- vinegar
- celery salt
- squash, grated - 12 c
- small jars pimientos - 2 item
- large onions, grated - 4 item
- large bell peppers, grated - 4 item
- pickling spice* - 2 tsp
- turmeric*
How to make squash relish:
Mix squash, peppers, salt, onions and pimientos and let stand overnight. Next morning, drain and rinse. Mix the vinegar, pickling spice, turmeric, sugar and celery salt in a saucepan. Heat to a boil and boil for 10 minutes. Remove spices; mix squash mixture in and boil for 5 minutes. Put in hot jars and seal. Makes about 6 to 61/2 pints.*Tie these spices in bag for easy removal.
