Squash relish
Ingredients/Components
- salt - 4 Tbsp
- vinegar
- dry mustard - 1 Tbsp
- finely chopped onion - 4 c
- celery seed - 1 Tbsp
- turmeric - 1 Tbsp
- sugar or a little less - 4 c
- green bell peppers, finely chopped - 2 item
- cornstarch, dissolved in 1/4 c - 1 Tbsp
- red bell peppers, finely chopped - 3 item
- finely chopped squash - 10 c
How to make squash relish:
Mix squash, onion and salt and leave overnight in refrigerator. In the morning, rinse and drain well. Put in a large pan with peppers, vinegar, sugar, mustard, celery seed and turmeric. Cook until tender, then add cornstarch dissolved in water. Add to mixture and boil 5 minutes. Pour in sterilized jars and seal.Recipe categories: Squash, Appetizers, Spreads.
