Squash relish
Ingredients/Components
- sugar - 3 c
- salt - 1/3 c
- chopped onion - 2 c
- celery seed - 1 Tbsp
- white vinegar - 2 c
- mustard seed - 1 Tbsp
- water to cover - 1 item
- jar pimientos - 1 oz
- medium bell peppers, chopped - 4 item
- grated yellow squash - 10 c
How to make squash relish:
Soak first four ingredients in salt and water to cover for 1 1/2 hours. Bring vinegar, sugar, mustard seed and celery seed to a boil. Drain squash and add to vinegar mixture. Stir until mixture boils. Put in hot jars and seal. Yields 4 pints.Recipe categories: Squash, Appetizers, Spreads.
