Squash casserole
Ingredients/Components
- eggs, beaten - 4 item
- vegetable oil - 1/2 c
- 8 oz - 2 c
- biscuit mix - 1 c
- garlic clove, minced - 1 item
- medium onion, chopped - 1 item
- can chopped green chilies with juice - 1 oz
- coarsely chopped summer squash, zucchini or yellow summer squash - 4 c
How to make squash casserole:
Combine eggs, oil and biscuit mix. Stir in chilies, onion, garlic and half of the cheese. Stir in squash. Pour into a greased 13 x 9-inch baking dish. Bake at 350° for 40 minutes; sprinkle with remaining cheese and bake 5 minutes more. Yields 8 tRecipe categories: Squash, Side dish, Casseroles.
