Ingredients/Components

  • milk - 1 c
  • salt - 1/4 tsp
  • flour - 3 Tbsp
  • butter - 3 Tbsp
  • eggs, separated - 4 item
  • pepper - 1/8 tsp
  • onion, finely chopped - 1 item
  • cheese, grated - 1/2 c
  • spinach, cooked and chopped - 1 c

How to make spinach souffle:

Melt butter; stir in flour and gradually add milk until mixture thickens. Stir in cheese and beaten egg yolks. Fold in onion and spinach. Stir until smooth and slightly cool. Fold stiffly beaten egg whites into mixture. Bake in buttered casserole at 350° until firm on top and soft inside, about 35 minutes.
